Verdejo Oro de Castilla 2007
TYPE OF WINE: Young White
ZONE OF PRODUCTION: D. O. Rueda: By the River Duero´s plateau, central Castilla, in the NorthWest of Spain.
GRAPE VARIETIES: 100% Verdejo, of the Vineyards: Montico, Los Hornos, Carro Santa Maria, and Morejona.
MAIN ITEMS IN ELABORATION: Night harvest (always below 15ºC), Cryomaceration, Juice cleared by gravity, Fermentation with own yeast at Tª< 14ºC; clarified before bottling and with only one filtering.
AGEING: In stainless steel tanks with their own lees for 4 months, with weekly stirring.
ANALYSIS: Alcoholic degree: 12.80 %Vol; Total Acidity: 4.9 gr/l (Tartaric acid); Volatile Acidity: 0.28 gr/l (Acetic acid); Sugar: < 2 gr/l Dry Extract: 31 gr/l.
